Vegetable Thai Red Curry

A vegan take on a Thai red curry. Here at Family Meals we like spice foods but you can always leave 1-2 chilli's out if you like a milder curry. Prep Time: 5 minutes  Cooking Time: 20 minutes What you need: 5 Shallots 3 Small Red Chilli's 4 Cloves of Garlic 2 Inch Fresh Ginger 1 Lime 1 Lemon 1 Pack Baby Corn 2 Peppers 1 Pack Mange Tout 1 Tin Coconut Milk 3 tsp Paprika 2 tsp Coriander Roughly chop the shallots, chilli and garlic. Grate the ginger, zest and juice both the lime and lemon and add it all to a blender. Add the paprika and coriander and blend it to a smooth paste. Heat 1/2 tsp of oil in a pan on a medium heat, chop the baby corn and peppers and add to the pan for 5 minutes. Add the paste and stir for another 3 minutes. Add the coconut milk stir and bring to the boil. Once bubbling, reduce the heat add the mange tout and simmer for 10 minutes. Cook rice following the instructions (we used microwaveable rice to keep it simple) Serve and

American Style Breakfast Pancakes

A great weekend breakfast treat, American style pancakes with smoked streaky bacon, blueberries and maple syrup. Prep Time: 5 minutes  Cooking Time: 10 minutes What you need: 125g Self Raising Flour 1 Egg 1 tsp Sugar 2 tsp Bicarbonate of Soda Pinch of Salt 250ml Milk Oil or butter for frying Toppings for your pancakes Smoked streaky bacon Blueberries Maple syrup You could instead top your pancakes with any fruit, yoghurt, chocolate sauce, golden syrup or eat them plain. Mix together the self raising flour, sugar, salt and bicarbonate of soda in a bowl or large jug. Add the egg and mix. The mixture will look a little lumpy but this is normal. Add the milk and whisk until you have a smooth batter mixture. Heat the butter or oil in a large frying pan and add a spoonful of the batter to the hot pan. Chilli Con Carne

Who Doesn't love a Chilli Con Carne, nice simple meal to make and can be made with beef mince or a vegetarian mince. The family love this one. Prep Time: 5 minutes  Cooking Time: 100 minutes (90 minutes are leaving it to simmer) What you need: 3 Banana Shallots 3 Cloves of Garlic 2 Red Chillies 400-500g Mince  1 tbsp Smoked Paprika 1/2 tsp Chilli Powder 2 tbsp Tomato Puree 1 tin Chopped Tomatoes 150ml Water 1 tsp Sugar 1 tsp Worcester Sauce Salt and Pepper Deseed the chillies and finally chop them as well as the banana shallots, crush the garlic. Add to a pan and fry for 5 minutes on a medium to high heat. Add the mince and fry for 1 minute to brown off then add the chilli powder, paprika, tomato puree and the tin tomatoes. Fry for a further minute on a medium heat. Rinse the kidney beans and add to the pan with water, sugar and worcester sauce. Feta and Spinach Cheese Frittata

We made this as a meat free Frittata with just feta cheese and spinach and served with lamb lettuce and beans, but you could add pancetta, chorizo or bacon to add some meat if you fancy it. This recipe will feed 4-5 adults Prep Time: 5 minutes  Cooking Time: 15-20 minutes What you need: 6 Eggs 1 White Onion 4 Tbsp Milk 1 Tbsp Sunflower Oil 100g Mushroom 100g Fresh Spinach 75g Feta Cheese Salt and Pepper Tbsp Butter 1/4 Tsp Freshly Ground Nutmeg Slice the mushrooms and onion. Cut up the feta cheese into cubes. Beat the eggs then mix in the milk, nutmeg and pinch of salt and pepper.  Melt the butter in a frying pan then fry the mushrooms and onion on a high heat for 2 minutes. Add the spinach and fry for another 1 minute. Pour the egg mix into the pan and mix the spinach and mushrooms in with the egg. Spread the feta cubes over the mixture and cook on a medium heat for 5 minutes. You will need to loosen the edges during this time. Once the base and edges are s

Fast Pepper and Black Bean Chilli

Fast and tasty, add mince in the pan first and cook for 5 mins for a meat dish or leave out for a vegetarian meal. Perfect for when you you need to be somewhere. Prep Time: 5 minutes  Cooking Time: 15-20 minutes We used microwave rice to keep with the speedy meal. What you need: 1 Red Onion 3 Romano Pepper's 400g Tin Black Beans (drained and rinsed) 350g Tomato Sauce 2-3 tbsp Chipotle Paste 50g Grated Cheddar Cheese Cooked Rice/Jacket Potatoes/Chips (Anything Really That You Want To Serve This With) Chop and deseed the peppers and slice the onion. Heat 1 tbsp of olive oil in a lidded frying pan then add the peppers and onion. Cook on a medium heat for 5 minutes. Add the beans, sauce and chipotle paste and mix well. Cover pan with the lid and simmer on a low heat for 10 minutes. Spoon the chilli over you rice/jacket potato and sprinkle the grated cheese on the chilli. Enjoy! That really is all the steps to make this tasty meal. 

Sausage and Lentil Casserole

Great meal that can be cooked in one pot. Can be made as a meat dish or a vegetarian. Prep Time: 5 minutes  Cooking Time: 20 minutes (Excluding making the mash potatoes) What you need: 1 White Onion 1 Pepper 150g Closed Cup Mushroom 5-6 Sausages (meat or vegetable) 500g-700g Baby New Potatoes 1 Clove Garlic 1 Tin of Lentils 1 Jar of Pasta Sauce Chop and deseed a pepper and chop up an onion. Heat 2 tbsp of oil in a large lidded frying pan and cook for 3-5 minutes on a medium heat. Slice up mushrooms then add them to the pan along with a tsp of paprika. Cook for another 5 minutes  Slice the sausages into 4 sections and then add them to the pan with another 2 tbsp of oil. Cook until the sausages have browned. Chop the potatoes into smaller sizes and add with crushed garlic. Cook for 3 minutes. Drain and rinse the lentils then add to the pan along with pasta sauce and season to taste (add a little water if required) Cover with a lid, reduce the heat and leave to sim

Bacon and Potato Cake

My 9 year old son had a school project about World War 2 and one of the things was about rationing and how they made the food go further with so little. As he learned about using what you have grown to make the rest go further he asked if we could make some of the recipes and try them. He made these for the family breakfast and I have to say he did a good job. The mash was made by myself the night before but both my little girl (age 6) and little boy (age 9) grilled the bacon and fried the cakes (under my supervision) Prep Time: 5 minutes  Cooking Time: 20 minutes (Excluding making the mash potatoes) What you need: 4-5 Potatoes 6 Rashers Streaky Bacon 100g Bread Crumbs Peel and chop the potatoes, place in a pan of water and boil until soft. Once the potatoes are soft, drain then mash and put to one side to cool. Once cooled down cook the bacon until crispy and chop into smaller pieces (roughly 1cm square) Mix the bacon into the mash and make into balls (roughly the
