Fast Pepper and Black Bean Chilli
Fast and tasty, add mince in the pan first and cook for 5 mins for a meat dish or leave out for a vegetarian meal. Perfect for when you you need to be somewhere.

What you need:
1 Red Onion
3 Romano Pepper's
400g Tin Black Beans (drained and rinsed)
350g Tomato Sauce
2-3 tbsp Chipotle Paste
50g Grated Cheddar Cheese
Cooked Rice/Jacket Potatoes/Chips (Anything Really That You Want To Serve This With)

- Chop and deseed the peppers and slice the onion.
- Heat 1 tbsp of olive oil in a lidded frying pan then add the peppers and onion. Cook on a medium heat for 5 minutes.
- Add the beans, sauce and chipotle paste and mix well. Cover pan with the lid and simmer on a low heat for 10 minutes.
- Spoon the chilli over you rice/jacket potato and sprinkle the grated cheese on the chilli.
- Enjoy! That really is all the steps to make this tasty meal.
