Sausage and Lentil Casserole
Great meal that can be cooked in one pot. Can be made as a meat dish or a vegetarian.
Prep Time: 5 minutes
Cooking Time: 20 minutes
(Excluding making the mash potatoes)
What you need:
1 White Onion
1 Pepper
150g Closed Cup Mushroom
5-6 Sausages (meat or vegetable)
500g-700g Baby New Potatoes
1 Clove Garlic
1 Tin of Lentils
1 Jar of Pasta Sauce

1 Jar of Pasta Sauce
- Chop and deseed a pepper and chop up an onion. Heat 2 tbsp of oil in a large lidded frying pan and cook for 3-5 minutes on a medium heat.
- Slice up mushrooms then add them to the pan along with a tsp of paprika. Cook for another 5 minutes
- Slice the sausages into 4 sections and then add them to the pan with another 2 tbsp of oil. Cook until the sausages have browned.
- Chop the potatoes into smaller sizes and add with crushed garlic. Cook for 3 minutes.
- Drain and rinse the lentils then add to the pan along with pasta sauce and season to taste (add a little water if required)
- Cover with a lid, reduce the heat and leave to simmer for 30 minutes until the potatoes are tender and soft.
- Serve with vegetables.
